Homemade Cherry Cheesecake Recipe

Ingredients:

Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

Cheesecake Filling:

  • 4 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1/4 cup all-purpose flour

Cherry Topping:

  • 1 can (21 oz) cherry pie filling

Directions:

  1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press mixture into the bottom of the prepared pan.
  3. In a large bowl, beat the cream cheese until smooth. Add 1 cup sugar and vanilla extract, beating until well combined.
  4. Add eggs one at a time, mixing on low speed after each addition just until blended. Stir in sour cream and flour until smooth.
  5. Pour the cheesecake filling over the crust. Bake for 55-60 minutes, or until the center is almost set. Turn off the oven and leave the cheesecake in the oven with the door slightly open for 1 hour.
  6. Remove cheesecake from the oven and let cool completely. Refrigerate for at least 4 hours or overnight.
  7. Spread cherry pie filling over the top of the cheesecake before serving.
