Refreshing Lemon Cheesecake Recipe

Lemon cheesecake is my new favorite summer dessert! Its zesty flavor and creamy texture make it the perfect treat for hot days. Below is the recipe for this delightful dessert.

Ingredients

Cheesecake Base:

  • 260g digestives
  • 100g unsalted butter, melted

Cheesecake Filling:

  • 600g full-fat cream cheese
  • 230g caster sugar
  • 3 large eggs
  • 190g shop-bought lemon curd
  • 3 tbsp lemon juice

Lemon Glaze:

  • 4 large egg yolks
  • 130g caster sugar
  • 1 tbsp lemon zest
  • 80mL fresh lemon juice (about 2-3 lemons)
  • 85g unsalted butter

Mascarpone Topping:

  • 200g mascarpone
  • 100g double cream
  • 60g icing sugar

Method

1. Prepare the Base:

  1. Preheat your oven to 180°C (350°F).
  2. Crush the digestives into fine crumbs.
  3. Mix the crumbs with the melted butter.
  4. Press this mixture into the bottom of a tin and bake for 10 minutes.

2. Make the Cheesecake Filling:

  1. In a large bowl, beat the cream cheese and sugar until smooth.
  2. Add the eggs one at a time, beating well after each addition.
  3. Add the lemon curd and lemon juice, and mix until everything is well combined.
  4. Pour the filling over the baked biscuit base.
  5. Bake for 40 minutes, or until the top is browned and the cheesecake has risen.
  6. Turn off the oven and let the cheesecake cool inside to prevent cracks.

3. Prepare the Lemon Glaze:

  1. In a double boiler, bring water to a boil, then reduce the heat to low.
  2. In the top part of the double boiler, whisk together the egg yolks, sugar, lemon zest, and lemon juice.
  3. Stir constantly until the mixture thickens.
  4. Remove from heat and stir in the butter until smooth.
  5. Pour the glaze over the cooled cheesecake.
  6. Refrigerate for at least 4 hours, or preferably overnight, to set completely.

4. Make the Mascarpone Topping:

  1. In a bowl, beat the mascarpone, double cream, and icing sugar until soft peaks form.
  2. Pipe the mascarpone topping over the lemon glaze on the cheesecake.
  3. Decorate with chopped lemons and mint.

5. Serve and Enjoy:

  1. Slice and serve the cheesecake.
