Ingredients:

  • 1 lb ground beef
  • 1 jar marinara sauce (24 oz)
  • 1 box oven-ready lasagna noodles
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1 tablespoon Italian seasoning
  • 2 cups fresh spinach
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Directions:

  1. Preheat Oven: Preheat to 375°F (190°C).
  2. Cook Beef: In a large skillet, brown the ground beef over medium heat. Drain excess fat.
  3. Add Vegetables: Add onion, bell pepper, and garlic. Sauté until tender.
  4. Simmer Sauce: Stir in marinara sauce and Italian seasoning. Simmer for 10 minutes.
  5. Prepare Ricotta Mixture: In a bowl, mix ricotta cheese, egg, and 1 cup mozzarella cheese. Season with salt and pepper.
  6. Layer Ingredients:
    • Spread a thin layer of meat sauce on a sheet pan.
    • Layer with lasagna noodles.
    • Spread ricotta mixture over noodles.
    • Add fresh spinach.
    • Repeat layers, ending with meat sauce, mozzarella, and Parmesan.
  7. Bake: Cover with foil and bake for 30 minutes. Remove foil and bake for 10 more minutes until cheese is bubbly and golden.
  8. Rest and Serve: Let lasagna rest for 10 minutes before slicing.
